PB & J Chickun Bites: 10 Days of Vegan Stampede

This is what happens when your inner child and your inner foodie team up for Stampede.

Welcome back to 10 Days of Vegan Stampede, an annual feature whereby I veganize some of the wacky and wonderful midway foods at the Calgary Stampede. But why you ask? The answer can be found back at Day 1 – [HERE]. Miss yesterday’s post? Find it [HERE].

Day 6: PB & J Chickun Bites

I don’t think I’ve ever had grape jelly or jam before now – this was some introduction!

The inspiration for this dish is the PB & Jammin Chicken at Calgary Stampede. The original is grape jelly glaze chicken topped with peanut satay sauce & crushed peanuts served in a waffle bowl.

My vegan version uses a vegan popcorn-style chicken, tossed of course in a grape jelly glaze, drizzled with peanut sauce and topped with scallions and chopped peanuts. I also served mine in a waffle bowl.

Peanut butter and jelly are a classic combination, so perhaps it should be no surprise that these PB & J Chickun Bites are incredible. They are sweet, savory, and according to one roommate, “the perfect hangover food”. High praise indeed!

PB & J Chickun Bites

When your inner child and your inner foodie meet at Stampede

Ingredients

  • 1 serving popcorn chickun, cooked according to package directions
  • 1 waffle bowl

For the Grape Jelly Glaze

  • ½ cup grape jelly
  • 2 tbsp water

For the Peanut Sauce

  • 1 clove garlic
  • 1 knuckle fresh ginger
  • 1 scallion, finely chopped, green part only
  • 1 tbsp toasted sesame oil
  • 1 tsp rice vinegar
  • 1 tbsp soy sauce
  • tbsp peanut butter

Instructions

For the Peanut Sauce

  1. Combine all ingredients in a small bowl and whisk together until well combined. If you prefer yours a little thinner, you can whisk in water, 1 tbsp at a time. Set aside.

For the Glaze

  1. Combine jelly with water and whisk with a hand frother or small blender, until it is the consistency of a thin syrup.

  2. Toss over cooked chickun pieces and add to waffle bowl.

To Finish the Bites

  1. Drizzle the peanut sauce over the bites.

  2. Top with chopped peanuts and scallions.
