Apple Cinnamon Crunch Pierogi: 10 Days of Vegan Stampede

Move over sour cream, there’s a new Sheriff in town.

Welcome back to 10 Days of Vegan Stampede, an annual feature whereby I veganize some of the wild and wacky midway foods at the Calgary Stampede. If you’re new here, it is strongly recommended you begin at Day 1 HERE.

Now, on to Day 3!


Day 3: Apple Cinnamon Crunch Pierogi

Full Disclosure: I actually don’t think this combination is so wacky, they just sounded delicious. The inspiration for these pierogies comes from the Apple Cinnamon Crumble pierogis at the midway, the base of which is cheddar and potato pierogi. Not only do apples and cheddar pair particularly well, but potato latkes, another Ukrainian staple, are often served with apple sauce. The pairing of spiced apples and potatoes isn’t a new one.

So when I saw the midway version – topped with apple pie filling, vanilla glaze, and cinnamon toast crunch – I knew that a vegan version would taste pretty good.

My vegan Apple Cinnamon Crunch Pierogis start with a base of store-brand Cheemo-knockoff potato and onion pierogis, but if you were feeling particularly fancy, you could obviously go to the trouble of making a vegan cheddar and potato pierogi. I, however, was not feeling particularly fancy, so I opted to dust these with some nooch instead for a cheesy flavour.

I needed some cinnamon cereal for the “crunch” but, similar to Fruit Loops, Cinnamon Toast Crunch also contains that pesky D3, so I opted for vegan-friendly Barbara’s Cinnamon Puffins. When I was putting this “recipe” together I also noticed Annie’s makes a vegan cinnamon toast crunch dupe, so that option exists too. Barbara’s Puffins are cheaper though.

Apple Cinnamon Crunch Pierogis are a great cheater dessert pierogi; you can throw them together with ingredients you probably already have on hand. A step above this would be a straight up apple cinnamon filled pierogi of course, but 10 Days of Vegan Stampede is all about EASY and tasty recreations. You gotta try these.

Apple Cinnamon Crunch Pierogi

Ingredients

  • 1 serving potato and onion pierogis cooked according to package directions (check ingredients to make sure they are vegan friendly)
  • cup canned apple pie filling
  • nooch for topping
  • vanilla glaze for topping
  • apple pie spice optional topping
  • ¼ cup cinnamon breakfast cereal, crushed (check ingredients to make sure it's vegan friendly)

For the Vanilla Glaze

  • approx 1 tbsp soy milk; you may need a little more depending on consistency
  • 1 tsp vanilla extract
  • ½ cup icing sugar

Instructions

Vanilla Glaze

  1. Combine icing sugar, vanilla, and soy milk in a small bowl, and whisk together with a fork until smooth. if you want a thinner consistency, add soy milk in ½ tsp increments until satisfied. If you accidentally make it too thin, add a tbsp of sugar.

For the Pierogis

  1. Assemble cooked pierogies in a bowl/basket, and add apple pie filling on top.

  2. Drizzle with vanilla glaze.

  3. Dust with nooch to taste.

  4. Add crushed breakfast cereal.

  5. Dust with apple pie spice to taste.
