TOASTED VEGAN BUTTER & SAGE SAUCE w/PASTA

A veganized version every pasta afficionado will enjoy

Ingredients

  • 1/3 cup plant butter this needs to either be Miyoko's plant butter, or a homemade butter that includes plant milk in the ingredients. See the blog post for reasons why.
  • 2-ish cups dry pasta
  • 2 cloves garlic, minced
  • 2 tbsp nutritional yeast
  • generous handful fresh sage, big stems removed
  • salt & pepper, to taste

Instructions

  1. Cook pasta according to package directions and set aside, reserving about a half cup of the pasta water.

  2. Heat frying pan (cast iron works VERY well for this) over medium heat.

  3. Add plant butter to heated frying pan, and stir to melt. Continue to stir and cook while the butter foams and bubbles for 4-5 minutes.

  4. As the bubbly foam starts to clear, continue to stir until you'll see browned toasted bits on the bottom of your pan.

  5. Carefully add the garlic, nutritional yeast, and the sage, and quickly stir to incorporate everything together. Add cooked pasta, and toss to coat, adding splashes of pasta water as needed to

  6. Add cooked pasta, and toss to coat, adding a few splashes of reserved pasta water as needed so the pasta stays loose.
