Dumplings gone wild!

And now, on to Day 4!
Day 4: Spicy (or Cheesy!) Cheeto Potstickers
Stampede food is all about fun; it’s about cultural fusion, ridiculous combinations, and daring to break the rules. And sometimes it can leave you wondering if what you’re seeing is more fever dream than fusion – like my Spicy or Cheesy Cheeto Potstickers. The midway version (by which I was inspired) are steam-fried dumplings tossed in a teriyaki sauce, and sprinkled with hot or regular Cheetos. My Vegan version of Spicy or Cheesy Cheeto potstickers is the basically the same, only we’re using veggie potstickers and vegan-friendly crushed snack toppings instead.
Finding vegan potstickers is pretty easy, if you know where to look. Siwin brand is available at most major grocery stores and comes in both a vegetable and a mock chicken version. Lucky Supermarket and T&T both have large dumpling sections and most of the vegetarian dumplings are actually vegan. Just double-check your ingredients before purchasing so you don’t get any surprises. When it comes to teriyaki sauce, you want to be on the lookout for fish sauce in the ingredients. No Name teriyaki sauce in the jar is vegan-friendly.
Earlier this year, Frito-Lay finally gave us VEGAN Cheetos and so obviously I had to use them here. For the spicy version, Taki’s Fuego are vegan friendly and give the dumplings that perfect spicy kick. You could also use the spicy/cheesy PC vegan cheese puffs. Hippeas makes a delicious vegan nacho cheezie that I am a very big fan of, and their bbq flavor that could be fun here. GoGo Quinoa also makes vegan puffs in flavours white cheddar, sriracha, and, excuse me, DILL PICKLE?! Anyways, you have so many choices here. Crush all the snacks and make the crispy potstickers of your dreams!

Ingredients
- 1 serving potstickers, cooked according to package directions (use whatever vegan dumpling you prefer)
- prepared teriyaki sauce, for drizzling (check labels to make sure its' vegan friendly; the no-name
- crushed vegan Cheetos, Takis Fuego, or whatever vegan option you like best (see the blog post for tips and ideas)
- chopped scallion for garnish
Instructions

Lay potstickers into a bowl or serving basket.

Drizzle with teriyaki sauce.

Top liberally with crushed vegan snack of choice.
