Vegan Spam exists—and it slaps.
Literally no need to mourn your meat.

Day 10: the Spam-pede Bao
Welcome to Day 10 of 10 Days of Vegan Stampede, and I’ve certainly saved the best for last. Inspired by the Spam-pede Bao down at the grounds, the original features a bun packed with SPAM, garlic shrimp, pineapple, and a teriyaki drizzle. And my vegan version is the same!
I know there are recipes out there for making a “SPAM-style tofu”, but for 10 Days of Vegan Stampede, I’ll be using OMNI’s Luncheon Meat slices. OMNI products have been around for a few years, but have been challenging to find sometimes in YYC. I would occasionally find the spam slices and even a ground pork at T&T, but it was very sporadic. This was very frustrating because OMNI pork is very tasty. Right now, you can buy these and a couple of other Omni products at Walmart (5.97/pkg) and I’ve also seen it at Homey Foods.
For our shrimp, we are using Happy Veggie World’s konjac shrimp, available at either Homey Foods, or Nan’s Noodle House also has it in their freezer section. We’ll use a homemade garlic butter, but that’s as much effort as we’re putting in here. Vegan buns were a little challenging to find at first, but I managed to find a brand at Lucky’s Supermarket, so LUCKY US we don’t have to make them.
“But how does it taste?!” I can hear you asking. Almost TOO authentic, I’ll say. The OMNI is, in my vegan opinion, a dead ringer for SPAM, and the “shrimp” are shrimping. Together in these bao they are delicious and I daresay you won’t feel like you’re missing out on a thing. I can’t wait for you to try them!

Spam-pede Bao
Ingredients
- 3 steamed buns, prepared according to package directions
- 3 slices OMNI Luncheon Meat, prepared according to package directions
- 3 konjac "shrimp" (reserve the rest for another recipe)
- 3 ½ slices of pineapple
- ¼ cup teriyaki sauce
- chopped green onion for garnish
For the Garlic Butter
- 2 tbsp plant butter
- 1 clove garlic, grated or minced
- ⅛ tsp salt
- ½ tsp dried parsley
- ¼ tsp crushed chili flakes
Instructions
For the Garlic Shrimp

Combine plant butter, garlic, salt, parsley and crushed chili flakes in a bowl. Mix well.

Coat frozen shrimp in garlic butter mixture, then place onto a lined baking sheet under the broiler for about 10 minutes, or until the shrimp is hot all the way through. Set aside.
To Assemble the Bao

Carefully open the bao using a sharp knife and your fingers. Insert one slice of OMNI, ½ slice of pineapple, 1 garlic shrimp, then drizzle with a tablespoon or two of teriyaki and top with green onion. Serve immediately.
