Cereal Monster Ice Cream Sandwiches (10 Days of Vegan Stampede)

Back again with another sweet treat for 10 Days of Vegan Stampede. I present to you the Cereal Monster Ice Cream Sandwich.

These are super fun – delicious vegan ice cream sandwiched between sugary cereal coated with vegan marshmallows. For these, I used Love Grown brand cereals, Dandies Marshmallows, and So Delicious cashew-based ice cream. I decided to do a “strawberry” version with Love Grown Sea Stars and vanilla ice cream, and a decadent chocolate version using Love Grown Power-O’s and everyone’s favourite Salted Caramel Cashew Cluster ice cream.

So here’s the thing: Dandies do not melt like regular marshmallows. That’s not to say they don’t melt, they clearly do, but it takes longer. I stirred those buggers for 10 minutes before they reached a consistency that could be combined with the cereal. But they did, and they will, however a little patience is definitely required. They also stay pretty thick and gooey, as you can see in the pictures, but I prefer this, so colour me happy, lol. This recipe can be used with whatever cereal and ice cream you prefer.

Cereal Monster Ice Cream Sandwiches

Ingredients

  • 1/4 cup coconut oil (I used Nutiva "Buttery" flavour
  • 1 pkg Dandies Miniature Marshmallows
  • 4 cups cereal of choice
  • 4 scoops vegan ice cream

Instructions

  1. In a saucepan over medium heat, melt the coconut oil.

  2. Add the full package of marshmallows. With a silicone spatula, stir continuously until the marshmallows are fully melted, around 10 minutes or so.
  3. Once melted, add the cereal to the marshmallows, continuing to stir until the cereal is thoroughly coated. Take 1/2 cup of the mixture, and form it into a flat circle, like a pancake, and place on a lined or greased cookie sheet. You should get about 8 circles. Be careful - the marshmallows will still be quite warm. Allow to sit for about 30 minutes, until set.

  4. Take one of the cereal circles, add 1 scoop of ice cream, and add another circle on top, pressing them together. Repeat with the remaining circles. Eat and enjoy, or store in an airtight container in the freezer for up to a week.
